A few weeks ago, British journalist Ed Stocker, of Monocle Magazine, came over to my home to record an episode of The Menu, the magazine’s podcast about international food interests. Ed is British, and only just moved to Brooklyn to run Monocle’s New York headquarters, so I thought I better impart some valuable Brooklyn wisdom on my new foreigner friend.

Where to start? Kale, of course, the building block of the King’s County diet. Ed admitted that he was relatively inexperienced in the ways of the dark, leafy green that is in such high demand on our side of the ocean, there is now a shortage. Well, not in my house. We headed out back into my salad garden, grabbed a bunch of Lacinto Kale (my preferred variety), and I put Ed to work massaging the s^#t out of it for a healthy caesar salad.
